Meatloaf
Meatloaf with Mashed Potatoes and Cheese:
Ingredients:
For the Meatloaf:
1 ½ lbs ground beef
½ lb ground pork (optional)
1 cup breadcrumbs
1 egg
½ cup milk
1 small onion, finely chopped
2 cloves garlic, minced
1 tablespoon Worcestershire sauce
2 tablespoons ketchup
Salt and pepper to taste
½ teaspoon dried thyme (optional)
½ teaspoon dried oregano (optional)
For the Mashed Potatoes:
4 large potatoes, peeled and cut into chunks
¼ cup butter
½ cup milk (more if needed)
Salt and pepper to taste
Topping:
1 cup shredded cheddar cheese (or your favorite cheese)
Instructions:
1. Make the Meatloaf:
1. Preheat your oven to 350°F (175°C).
2. In a large mixing bowl, combine ground beef, ground pork (if using), breadcrumbs, egg, milk, onion, garlic, Worcestershire sauce, ketchup, salt, pepper, thyme, and oregano. Mix everything until combined but don’t overmix.
3. Form the mixture into a loaf shape and place it in a greased loaf pan or on a baking sheet.
4. Bake the meatloaf for about 1 hour, or until it reaches an internal temperature of 160°F (71°C).
5. About 10 minutes before it’s done, sprinkle the shredded cheese on top to melt.
2. Prepare the Mashed Potatoes:
1. While the meatloaf is baking, bring a large pot of salted water to a boil. Add the potatoes and cook until tender, about 15-20 minutes.
2. Drain the potatoes and return them to the pot. Add butter, milk, salt, and pepper. Mash until smooth and creamy. Add more milk if necessary to reach your desired consistency.
3. Serve:
Let the meatloaf rest for about 5 minutes before slicing.
Serve slices of meatloaf with a generous portion of mashed potatoes, and enjoy!
This dish pairs well with a side of steamed vegetables or a simple salad.
