fish and chips
Ingredients:
For the Fish:
4 pieces of white fish fillets (like cod or haddock)
1 cup all-purpose flour (for coating)
1 cup all-purpose flour (for batter)
1 tsp baking powder
1 tsp salt
1/2 tsp pepper
1 cup cold sparkling water or beer
Oil for frying (like vegetable or canola oil)
For the Chips:
4 large potatoes, peeled and cut into thick fries
2 tbsp vegetable oil
Salt to taste
Instructions:
1. Prepare the Chips:
Soak the potato fries in cold water for at least 30 minutes to remove excess starch.
Preheat the oven to 425°F (220°C).
Pat the potatoes dry with a towel. Toss them with vegetable oil and salt.
Arrange the fries in a single layer on a baking sheet.
Bake for 30-35 minutes, flipping halfway through, until golden and crispy.
2. Prepare the Fish:
In a bowl, combine 1 cup of flour, baking powder, salt, and pepper.
Gradually whisk in the cold sparkling water or beer until the batter is smooth and slightly thickened.
Dredge each fish fillet in the additional flour to coat lightly, then dip into the batter.
Heat oil in a deep pan or fryer to 350°F (175°C). The oil should be enough to submerge the fish.
Fry the fish fillets in batches, without overcrowding, for 5-7 minutes or until golden brown and cooked through. Use a slotted spoon to transfer them to a plate lined with paper towels.
3. Serve:
Serve the fish and chips hot with malt vinegar, tartar sauce, or lemon wedges as desired.
