Amish White Bread
Ingredients:
2 cups warm water (110°F or 45°C)
2/3 cup white sugar
1 1/2 tablespoons active dry yeast
1 1/2 teaspoons salt
1/4 cup vegetable oil
6 cups bread flour (or all-purpose flour)
Instructions:
1. Activate the yeast: In a large bowl, dissolve the sugar in warm water, then stir in the yeast. Allow the mixture to sit until the yeast is foamy, about 5-10 minutes.
2. Mix the dough: Add the salt and oil into the yeast mixture. Gradually mix in the flour, one cup at a time, until a dough forms.
3. Knead: Transfer the dough to a lightly floured surface and knead for about 8-10 minutes until smooth and elastic.
4. First rise: Place the dough in a well-oiled bowl, turning it once to coat the top. Cover with a damp cloth and allow it to rise in a warm place until doubled in size, about 1 hour.
5. Shape the loaves: Punch down the dough, divide it in half, and shape each half into a loaf. Place the loaves in two greased 9×5 inch loaf pans.
6. Second rise: Cover the loaves and let them rise again until doubled in size, about 30 minutes.
7. Bake: Preheat your oven to 350°F (175°C). Bake the loaves for 25 to 30 minutes, or until the tops are golden brown and the bread sounds hollow when tapped.
8. Cool: Remove the loaves from the oven and place them on wire racks to cool.
