Steak
steak with mashed potatoes and tomatoes:
Ingredients
For the Steak:
2 ribeye or sirloin steaks
Salt and pepper, to taste
2 tbsp olive oil
2 cloves garlic, minced
1 tbsp fresh rosemary or thyme (optional)
For the Mashed Potatoes:
4 large potatoes, peeled and diced
1/2 cup milk (more if needed)
4 tbsp butter
Salt and pepper, to taste
For the Tomatoes:
4 ripe tomatoes, sliced
1 tbsp olive oil
1 tsp dried oregano
Salt and pepper, to taste
Instructions
1. Prepare the Mashed Potatoes:
1. Place the diced potatoes in a large pot and cover with water. Bring to a boil and cook until tender, about 15 minutes.
2. Drain the potatoes and return them to the pot. Add butter and milk, and mash until smooth. Season with salt and pepper to taste. Keep warm.
2. Cook the Steak:
1. Season the steaks with salt and pepper on both sides.
2. Heat olive oil in a skillet over medium-high heat. Add the steaks and cook to your desired level of doneness (about 4-5 minutes per side for medium-rare). Add minced garlic and herbs during the last minute of cooking, if using.
3. Let the steaks rest for a few minutes before serving.
3. Prepare the Tomatoes:
1. Preheat the oven to 375°F (190°C).
2. Arrange tomato slices on a baking sheet, drizzle with olive oil, and sprinkle with oregano, salt, and pepper.
3. Bake for about 15 minutes, or until tomatoes are tender and slightly caramelized.
4. Serve:
Plate the steak with a generous serving of mashed potatoes and roasted tomatoes on the side.
