Cherry Bars
Ingredients:
For the Crust and Topping:
1 cup unsalted butter, softened
2 cups granulated sugar
4 large eggs
1 teaspoon vanilla extract
3 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
For the Filling:
1 can (21 oz) cherry pie filling
For the Glaze (optional):
1 cup powdered sugar
½ teaspoon vanilla extract
2-3 tablespoons milk
Instructions:
1. Preheat the oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
2. Make the Crust/Topping:
In a large bowl, cream the butter and sugar until light and fluffy.
Add eggs one at a time, beating well after each addition. Mix in the vanilla extract.
In a separate bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until combined.
3. Assemble the Bars:
Spread about two-thirds of the dough evenly into the prepared baking pan.
Spread the cherry pie filling evenly over the dough.
Drop the remaining dough by spoonfuls over the cherry filling.
4. Bake:
Bake for 35-40 minutes, or until the top is golden brown.
Remove from the oven and let the bars cool completely.
5. Make the Glaze (optional):
In a small bowl, whisk together the powdered sugar, vanilla extract, and milk until smooth.
Drizzle the glaze over the cooled bars.
6. Cut and Serve:
Once the glaze is set, cut into bars and enjoy!
