Cabbage
Fried Cabbage with Bacon, Onion, and Garlic:
Ingredients:
6 slices of bacon, diced
1 large head of cabbage, core removed and sliced
2 cloves garlic, minced
1 large onion, diced
1 tablespoon of salt
1 teaspoon ground black pepper
Optional: red pepper flakes or smoked paprika for extra flavor
Instructions:
1. Cook the Bacon:
In a large skillet or pan over medium heat, cook the bacon pieces until crispy. This will take about 5-7 minutes. Once done, use a slotted spoon to transfer the bacon to a plate lined with paper towels to drain, but leave the bacon grease in the pan.
2. Cook the Onion and Garlic:
In the same pan with the bacon grease, add the diced onion. Cook, stirring occasionally, until the onion softens and becomes translucent, about 3-4 minutes.
Add the minced garlic and cook for an additional minute, stirring to combine.
3. Add the Cabbage:
Stir the sliced cabbage into the pan with the onion and garlic. Cook for about 8-10 minutes, stirring occasionally, until the cabbage wilts down and becomes tender. If the pan becomes too dry, you can add a small splash of water or chicken broth.
4. Season:
Add the salt, black pepper, and any optional seasonings (like red pepper flakes or smoked paprika) to taste. Stir to mix the seasonings evenly through the cabbage.
5. Combine and Serve:
Stir the cooked bacon back into the cabbage mixture. Taste and adjust the seasoning if needed.
Serve hot and enjoy!
This dish goes great as a side for roasted meats or can be eaten on its own for a low-carb meal.
