Apple fritters
Big Apple Fritters
Ingredients:
2 large apples (Granny Smith or Honeycrisp work well)
2 cups all-purpose flour
2 tsp baking powder
1/4 cup granulated sugar
1 tsp cinnamon
1/2 tsp salt
2 large eggs
3/4 cup whole milk
1 tsp vanilla extract
1 tbsp melted butter
Vegetable oil for frying
For the glaze:
1 1/2 cups powdered sugar
2-3 tbsp milk
1/2 tsp vanilla extract
Instructions:
1. Prepare the Apples:
Peel, core, and dice the apples into small chunks. Set aside.
2. Mix the Dry Ingredients:
In a large bowl, whisk together flour, baking powder, sugar, cinnamon, and salt.
3. Mix the Wet Ingredients:
In a separate bowl, whisk eggs, milk, vanilla extract, and melted butter.
4. Combine:
Gradually add the wet mixture to the dry ingredients, stirring gently until just combined. Fold in the diced apples.
5. Frying:
Heat vegetable oil in a large pot or deep fryer to 350°F (175°C). Drop the apple batter by large spoonfuls into the hot oil. Fry for about 2-3 minutes on each side until golden brown and cooked through.
Remove the fritters with a slotted spoon and drain on paper towels.
6. Make the Glaze:
In a bowl, whisk together powdered sugar, milk, and vanilla extract until smooth.
7. Glaze the Fritters:
While the fritters are still warm, drizzle the glaze over them or dip them for a thicker glaze.
8. Serve:
Serve warm and enjoy!
These fritters are crisp on the outside and soft and apple-packed on the inside.
