Cajun Corn on the Cob
Ingredients:
4 ears of corn, husked and cleaned
1/4 cup butter, melted
1 tablespoon Cajun seasoning (or adjust to taste)
1/2 teaspoon garlic powder
1/2 teaspoon smoked paprika
1/4 teaspoon cayenne pepper (optional, for extra heat)
Salt and black pepper, to taste
Fresh parsley or cilantro (optional for garnish)
Lemon or lime wedges (optional, for serving)

Instructions:
1. Preheat the grill or oven: If grilling, heat your grill to medium-high. If roasting, preheat your oven to 400°F (200°C).
2. Mix the Cajun butter: In a small bowl, combine the melted butter, Cajun seasoning, garlic powder, smoked paprika, cayenne pepper (if using), salt, and black pepper. Mix well.
3. Prepare the corn:
Brush each ear of corn generously with the Cajun butter mixture, making sure to coat all sides.
If you’re grilling, wrap the corn in aluminum foil for easy cooking or place directly on the grill for a charred flavor.
4. Cook the corn:
Grill: Place the corn on the grill and cook for 10-15 minutes, turning occasionally, until the kernels are tender and slightly charred.
Oven: Place the corn on a baking sheet and roast for 20-25 minutes, turning halfway through.
5. Garnish and serve: Once cooked, brush the corn with any leftover Cajun butter. Optionally, sprinkle with fresh parsley or cilantro and serve with lemon or lime wedges for an extra burst of flavor.
