Italian Chicken Pasta:
Ingredients
For the Pasta:
12 oz pasta (penne or fusilli works well)
Salt (for boiling water)
For the Chicken:
2 boneless, skinless chicken breasts
2 tablespoons olive oil
Salt and pepper (to taste)
1 teaspoon Italian seasoning
For the Sauce:
3 cloves garlic, minced
1 can (14 oz) diced tomatoes (with juices)
1 cup heavy cream
1 cup spinach (fresh or frozen)
½ cup grated Parmesan cheese
Fresh basil (for garnish, optional)
Instructions
1. Cook the Pasta:
Boil salted water in a large pot. Add pasta and cook according to package instructions until al dente. Drain and set aside.
2. Prepare the Chicken:
Season the chicken breasts with salt, pepper, and Italian seasoning.
In a large skillet, heat olive oil over medium heat. Add chicken and cook for about 5-7 minutes on each side, or until cooked through. Remove from the skillet and slice.
3. Make the Sauce:
In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
Stir in the diced tomatoes (with juices) and cook for 2-3 minutes.
Add heavy cream and bring to a simmer. Stir in spinach and let it wilt.
Mix in the Parmesan cheese until melted and smooth.
4. Combine:
Add the cooked pasta and sliced chicken to the sauce. Toss to combine and heat through.
5. Serve:
Plate the pasta, garnishing with fresh basil if desired. Enjoy!
