Lemon Meringue Pie
Ingredients:
1 standard-sized baked pie crust
1½ cups water
1 cup white sugar
4 large eggs (separated)
1/4 cup cornstarch
1/2 cup fresh lemon juice (about 2-3 lemons)
Zest of 1 lemon
1/4 tsp salt
1/4 tsp cream of tartar
Instructions:
1. Prepare the Filling:
In a saucepan, combine water, sugar, cornstarch, and salt. Stir over medium heat until the mixture thickens and comes to a boil.
Remove from heat. In a separate bowl, beat the egg yolks. Gradually add a small amount of the hot mixture to the yolks to temper them, then pour the yolk mixture back into the saucepan.
Stir in lemon juice and lemon zest. Cook for another 2 minutes until thickened. Pour filling into the baked pie crust.
2. Make the Meringue:
In a clean bowl, beat the egg whites with cream of tartar until soft peaks form. Gradually add sugar and continue beating until stiff peaks form.
Spread the meringue over the lemon filling, sealing the edges to prevent shrinkage.
3. Bake:
Bake in a preheated oven at 350°F (175°C) for about 10-12 minutes or until the meringue is golden brown.
4. Cool and Serve:
Allow the pie to cool completely before serving to let the filling set.
