Ingredients:
1 cup cornmeal
1 cup all-purpose flour
1/4 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
Instructions:
1. Combine Dry Ingredients: In a large bowl, mix together the cornmeal, flour, sugar, baking powder, and salt until well combined.
2. Store or Use: If you’re not using the mix immediately, store it in an airtight container in a cool, dry place. It should last for up to 3 months.
To Make Corn Muffins:
1. Preheat Oven: Preheat your oven to 400°F (200°C) and grease a muffin tin or line it with paper liners.
2. Mix Wet Ingredients: In another bowl, whisk together 1 cup milk, 1/3 cup vegetable oil, and 1 large egg.
3. Combine Mixtures: Pour the wet ingredients into the dry mix and stir until just combined. Do not overmix.
4. Fill Muffin Tins: Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
