Big Apple Fritter
Ingredients:
For the Fritters:
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon nutmeg (optional)
1/4 cup granulated sugar
1/2 cup milk
2 large eggs
2 tablespoons melted butter
2 cups peeled, diced apples (about 2 medium apples)
1 teaspoon vanilla extract
Oil for frying
For the Glaze:
1 cup powdered sugar
2 tablespoons milk
1/2 teaspoon vanilla extract
Instructions:
1. Prepare the Apples:
Peel, core, and dice the apples. Set aside.
2. Make the Batter:
In a large bowl, whisk together the flour, baking powder, salt, cinnamon, nutmeg, and sugar.
In another bowl, mix the milk, eggs, melted butter, and vanilla.
Combine the wet and dry ingredients until just mixed, then fold in the diced apples.
3. Heat the Oil:
In a deep skillet or fryer, heat oil to about 350°F (175°C).

Drop spoonfuls of batter into the hot oil, frying a few at a time. Fry for about 3-4 minutes per side, or until golden brown.
Remove fritters and place on paper towels to drain excess oil.

In a small bowl, whisk together the powdered sugar, milk, and vanilla until smooth.
6. Glaze the Fritters:
Drizzle or dip the warm fritters in the glaze.
7. Serve:

Feel free to add nuts or raisins to the batter for extra flavor!
