Classic Philly Cheesesteak

– 1/2 pound ribeye steak, thinly sliced
– 1 large onion, thinly sliced
– 2 tablespoons olive oil
– 4 Italian hoagie rolls, split lengthwise
– 8 slices Provolone cheese
– Salt and pepper to taste

1. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the onions and a pinch of salt, cooking until caramelized, about 15-20 minutes. Remove onions from the skillet and set aside.
2. Increase the heat to medium-high and add the remaining olive oil to the skillet. Add the thinly sliced steak and season with salt and pepper. Cook until the steak is no longer pink, about 3-5 minutes, stirring frequently.
3. Divide the steak into four portions in the skillet. Top each portion with caramelized onions and two slices of Provolone cheese. Cover the skillet with a lid for about 1 minute to melt the cheese.
4. Scoop each portion into a hoagie roll. Serve immediately.
