**Instructions**:
1. **Preparation**:
– Season the beef with salt and pepper.
– In a skillet, brown the beef cubes on all sides over medium-high heat. This step is optional but enhances the flavor.
2. **Combine Ingredients**:
– In the slow cooker, layer the browned beef, chopped onion, minced garlic, sliced carrots, and chopped potatoes.
– Pour the beef broth, dry red wine, and tomato sauce over the meat and vegetables.
– Add the dried thyme, and season with additional salt and pepper to taste.
3. **Cooking**:
– Cover the slow cooker with the lid and cook on **low** heat for 6 to 8 hours, or on **high** heat for 4 to 5 hours, until the meat is tender and the vegetables are cooked through.
4. **Thicken the Stew**:
– When the stew is cooked, mix the 2 tablespoons of cornstarch with 2 tablespoons of water in a small bowl to form a slurry.
– Stir the slurry into the stew to thicken it. Cook on high heat for an additional 15 minutes.
5. **Serve**:
– Once the stew has thickened, it’s ready to serve. Taste and adjust seasoning if necessary.
– Serve the beef stew hot with crusty bread or over rice.
