Sausage
Ingredients:
– 8 eggs
– 1 pound pork sausage (Jimmy Dean for that classic taste)
– 1 1/2 cups whole milk or heavy cream
– 1 package frozen tater tots (approximately 24 oz)
– 2 cups cheddar cheese
– 1 1/2 tsp salt
– 1 tsp black pepper
– 1/4 tsp garlic powder
Instructions:
1. Preheat the oven to 375°F and generously spray a 9 x 13 pan with non-stick cooking spray.
2. Brown the pork sausage over medium heat in a skillet, breaking it into small pieces. Drain any excess grease and set the cooked sausage aside.
3. In a bowl, whisk together 8 eggs, 1 1/2 cups of heavy cream (or whole milk), and all the spices.
4. Arrange frozen tater tots in the bottom of the dish to form a full layer.
5. On top of the tater tots, add the pre-cooked sausage, 2 cups of cheddar cheese, and pour the whisked egg mixture over them.
6. Cover the casserole dish with foil to prevent the edges from cooking too quickly and burning.
7. Bake the tater tot casserole for 40 minutes initially. Remove the foil and bake for an additional 15-20 minutes or until the center egg is fully cooked. Check at the 40-45 minute mark, as some ovens may cook faster.
8. Serve hot with classic American toppings like sour cream, tomatoes, salsa, or crispy bacon.
