Crunchy fried chicken
Crispy fried chicken is a classic dish that is loved by people of all ages. The key to making crispy fried chicken is to use a combination of buttermilk and flour to coat the chicken. The buttermilk helps to tenderize the chicken, while the flour creates a crispy crust. The chicken is then fried in hot oil until golden brown.
Ingredients
2 kg of chicken cut by the knuckles
Juice and zest of 1 lemon rind
Salt, pepper, chopped parsley to taste
1 cup cornmeal (tea)
1 cup of breadcrumbs (tea)
1 cup mayonnaise (tea)
5 minced garlic cloves
Frying oil
Method of preparation
Cut the chicken, clean well and dry. Place in a bowl, season with lemon juice, salt, pepper and parsley to taste and let rest for 1 hour in the refrigerator.
In a bowl, combine the cornmeal, flour, lemon zest and pepper in a shallow dish. Dip the chicken pieces in the mayonnaise and then in the dry mixture.
Heat a large skillet with oil. Fry the garlic cloves for 3 minutes or until golden. Drain on absorbent paper. Then fry the chicken pieces little by little until golden brown.
Drain on absorbent paper and transfer to a plate. Sprinkle the garlic and serve. If desired, serve with lemon wedges.
