Louisiana Red Beans

**Ingredients:**
– 1 pound Camellia red beans
– 1 large onion
– 1 large bell pepper
– 3 stalks celery
– 4 cloves garlic
– 3 bay leaves
– Salt
– Pepper
– Slap Ya Mama seasoning
– Smoked neck bones
– 1 pound good quality smoked sausage

**Instructions:**

1. **Prepare Ingredients:** Rinse and sort the red beans. Dice the onion, bell pepper, celery, and mince the garlic.

2. **Cooking the Beans:** In a large pot, combine red beans, diced vegetables, bay leaves, salt, pepper, Slap Ya Mama seasoning (to taste), and smoked neck bones. Cover with enough water and bring to a boil. Reduce heat and simmer for 2-3 hours until beans are tender, stirring occasionally.

3. **Prepare Sausage:** Slice the smoked sausage into rounds. In a separate skillet, lightly brown the sausage rounds until they have a bit of color.

4. **Combine and Serve:** Once the beans are tender and the sauce has thickened to your liking, remove the bay leaves and neck bones. Stir in the browned smoked sausage rounds.

5. **Serve:** Serve the Louisiana red beans over rice or on their own, garnished with chopped green onions if desired.
