Asparagus Stuffed Chicken
Ingredients:

– 1/2 cup (2.36 oz) Raw Asparagus (1 green)
– 6.8 oz raw chicken (3/4 lean)
– 1 oz part-skim Shredded Mozzarella Cheese (1/4 lean)
– 1/4 tsp salt (1 condiment)
– 1/2 tsp ground pepper (1 condiment)
– 1/2 tsp garlic powder (1 condiment)
– 1 tbsp olive oil (1 healthy fat)
Instructions:
1. Preheat oven to 425 degrees F. Cut the chicken breast in half lengthwise, leaving it intact on one side to create a pocket for stuffing.
2. Season the inside of the chicken breast with half of the salt, pepper, and garlic powder.
3. Sprinkle the mozzarella cheese and the 1/2 cup of asparagus in the center of the chicken breast and fold it over to enclose the filling.
4. Season the outside of the chicken breast with the other half of salt, pepper, and garlic powder.
5. Heat a large, oven-safe skillet (such as cast iron) over medium-high heat and add the 1 tbsp. olive oil, swirling to coat the bottom of the skillet.
6. Cook the chicken top side down for 3 to 5 minutes until it easily releases from the pan and is golden brown on top.
7. Flip the chicken over and cook an additional 3 to 5 minutes to sear the bottom side.
8. Carefully cover the skillet with foil and place it in the preheated oven. Bake for an additional 15 minutes or until the internal temperature of the chicken reaches 155 degrees.
9. Remove the skillet from the oven and let it sit, covered, for about 5 minutes. The chicken’s temperature should rise to meet 160 degrees, resulting in a super tender and juicy dish!
Notes:
– If you don’t have an oven-safe skillet, use a regular skillet and then transfer the chicken breast to a baking dish, covering it with foil before placing it in the oven.
– Toothpicks can be used to hold the stuffed chicken together for better stability. Enjoy!
