Chuck roast

Ingredients:
– 2-pound chuck roast
– 2 cloves garlic
– 8 oz baby carrots
– 16 oz golden potatoes (cut in half or quarters if large)
– 1/2 cup red wine
– 1 tablespoon garlic and herb seasoning
– 1 tablespoon olive oil
– 1 tablespoon butter
– 1/2 sweet yellow onion
– 3 cups beef broth
– 1/4 cup tapioca pearls
– 1/4 cup cornstarch
– 2 tablespoons tomato paste

Steps:

1. Season the chuck roast thoroughly with the garlic and herb seasoning, ensuring it’s fully coated.
2. Heat olive oil in a slow cooker or skillet over medium-high heat.
3. Brown the roast on each side in the hot oil.
4. Place the browned roast in the slow cooker along with the potatoes and carrots.
5. Prepare a slurry by whisking 1/4 cup of water with the cornstarch.
6. In the slow cooker, combine the slurry with the remaining ingredients, including the beef broth and tomato paste.
7. Set the slow cooker to low heat and let it cook for about 8-10 hours, until the roast is tender and all the flavors are combined.
8. Adjust the seasoning according to your taste preferences.
9. Serve the pot roast with its gravy and enjoy a fork-tender and flavorful meal.
