Spaghetti Sauce with Fresh Tomatoes
Delicious Homemade Tomato-Based Spaghetti Sauce
Ingredients:
6 ripe tomatoes
3 cloves garlic, minced
1 onion, finely chopped
2 tablespoons olive oil
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon red pepper flakes (adjust to taste)
Salt and black pepper to taste
1/4 cup fresh basil leaves, torn
1/4 cup fresh parsley, chopped
Grated Parmesan cheese (optional)
Cooked spaghetti, for serving
Directions:
Start by blanching the tomatoes. Bring a large pot of water to a boil. Score the tomatoes with an “X” at the bottom and place them in boiling water for about 1 minute. Then, transfer them to a bowl of ice water. This will make it easier to peel off the skin. Once cooled, peel the tomatoes, remove the seeds, and chop them.
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped onion. Sauté until the onion becomes translucent, about 3 minutes.
Add the chopped tomatoes, dried basil, dried oregano, red pepper flakes, salt, and black pepper to the skillet. Stir well and let it simmer for 15-20 minutes, or until the sauce thickens.
Stir in the torn fresh basil leaves and chopped parsley. Cook for an additional 2 minutes.
Serve the spaghetti sauce over cooked spaghetti. Top with grated Parmesan cheese if desired.
