Cajun Shrimp Fried Rice

Cajun Shrimp Fried Rice:

Ingredients:
– 3 cups leftover cooked brown or white rice
– 1 lb large shrimp, peeled and deveined
– 1/2 tsp chili powder
– 1/2 tsp paprika
– 1/2 tsp garlic powder
– 1/8 tsp cayenne pepper, or more to taste
– 1/4 tsp kosher salt
– Fresh black pepper, to taste
– 2 large egg whites, beaten
– 1 large whole egg, beaten
– 1/2 medium onion, chopped
– 2 cloves garlic, diced
– 5 medium scallions, chopped, whites and greens separated

Instructions:
1. In a bowl, toss the peeled and deveined shrimp with chili powder, paprika, garlic powder, cayenne pepper, kosher salt, and black pepper to taste.
2. In a large skillet or wok, heat some oil over medium-high heat. Add the seasoned shrimp and cook until they turn pink and opaque. Remove the shrimp from the skillet and set them aside.

3. In the same skillet, add chopped onions, diced garlic, and the white parts of the chopped scallions. Sauté until the onions become translucent.

4. Push the onion mixture to one side of the skillet and pour beaten egg whites and whole beaten egg into the other side. Scramble the eggs until cooked through.
5. Add the cooked rice to the skillet and stir-fry everything together, incorporating the scrambled eggs and onion mixture evenly.
6. Return the cooked shrimp to the skillet and toss everything together, making sure the shrimp and rice are well combined.
7. Finally, add the green parts of the chopped scallions to the skillet, mix them in, and cook for another minute or so.
