BANANA PUDDING FROM SCRATCH

Ingredients:
1/2 cup sugar
2 tablespoons flour
1/4 teaspoon salt
2 cups milk
4 eggs, separated
1 tablespoon vanilla extract
1 box of Nilla Vanilla Wafers (or digestive biscuits in the UK)
4 medium ripe bananas

Recipe:

1. In a medium saucepan, whisk together the sugar, flour, and salt.

2. Gradually stir in the milk until the mixture is smooth.

3. Cook the mixture over medium heat, stirring constantly, until it thickens and comes to a boil. Let it boil for one minute, then remove from heat.

4. In a separate bowl, beat the egg yolks.

5. Slowly add a small amount of the hot milk mixture to the beaten egg yolks, whisking constantly. This helps temper the eggs and prevent them from curdling.

6. Gradually pour the egg mixture back into the saucepan with the remaining milk mixture, stirring constantly.

7. Place the saucepan back on the stove over medium heat and cook for an additional 2 minutes, stirring continuously until the pudding becomes thick and creamy.

8. Remove from heat and stir in the vanilla extract.

9. In a separate dish or trifle bowl, layer the Nilla Vanilla Wafers (or digestive biscuits) at the bottom.

10. Slice the ripe bananas and layer them on top of the wafers.

11. Pour a portion of the warm pudding over the banana and wafer layers.

12. Continue layering the wafers, bananas, and pudding until all the ingredients are used, ending with a layer of pudding on top.

13. Cover the pudding with plastic wrap, ensuring it touches the surface to prevent a skin from forming.

14. Refrigerate the banana pudding for at least 4 hours or overnight to allow the flavors to meld and the pudding to set.

15. Before serving, you can garnish the top with additional Nilla Vanilla Wafers (or biscuits) or banana slices if desired.
