Noodles with Prawns
Ingredients:
– 6.3 ounces (180g) King prawns (peeled, deveined)
– 14.1 ounces (400g) Shanghai noodles or Udon noodles
– 3 dried shiitake mushrooms, sliced
– Vegetable oil
– 3 cloves of garlic
– 3 spring onions (green onions)
– 2.8 ounces (80g) cabbage
– 1/2 bell pepper, sliced
Prawn Seasonings:
– 1/4 tsp black pepper
– Salt, to taste
Stir Fry Sauce:
– 1 tbsp light soy sauce
– 2 tbsp oyster sauce
– 1 tsp dark soy sauce
– 1 tsp Shaoxing cooking wine or rice vinegar
– 1 tsp sugar
– 1 tsp sesame oil
Instructions:
1. Prepare the ingredients by peeling and deveining the king prawns. Slice the shiitake mushrooms, garlic, spring onions, cabbage, and bell pepper.
2. Cook the Shanghai noodles or Udon noodles according to the package instructions. Drain and set aside.
3. In a small bowl, mix together the prawn seasonings: black pepper and salt. Toss the peeled and deveined prawns in the seasoning mixture.
4. Heat some vegetable oil in a wok or large frying pan over medium-high heat. Add the seasoned prawns and stir-fry until they turn pink and are cooked through. Remove the prawns from the wok and set them aside.
5. In the same wok, add a bit more vegetable oil if needed, and sauté the sliced shiitake mushrooms, garlic, and white parts of the spring onions until fragrant.
6. Add the sliced cabbage and bell pepper to the wok, and stir-fry until they start to soften.
7. In a separate bowl, prepare the stir-fry sauce by mixing together the light soy sauce, oyster sauce, dark soy sauce, Shaoxing cooking wine (or rice vinegar), sugar, and sesame oil.
8. Add the cooked noodles to the wok with the vegetables and pour the stir-fry sauce over the noodles. Toss everything together to coat the noodles and vegetables evenly with the sauce.
9. Finally, add the cooked prawns back into the wok and gently mix them with the noodles and vegetables.
10. Garnish with the green parts of the spring onions (sliced) and give it a final toss.
11. Serve the delicious Noodles with Prawns hot and enjoy!
